TOFU SCRAMBLE

Ingredients:

  • 1 block (14 oz) extra-firm tofu

    1 tablespoon olive oil

    1/2 small onion, finely chopped

    1/2 red bell pepper, diced

    2 cloves garlic, minced

    1/2 teaspoon turmeric powder

    1/2 teaspoon smoked paprika

    Salt and pepper to taste

    2 green onions, thinly sliced (for garnish)

    Fresh parsley or cilantro, chopped (optional, for garnish)

    Optional Additions:

    Spinach or kale, chopped

    Sliced mushrooms

    Vegan cheese

    Salsa

    Avocado slices

    Kimchi

Instructions:

Prepare the Tofu:

Drain the tofu and wrap it in a clean kitchen towel or paper towels. Place something heavy on top (like a cast-iron skillet) to press out excess moisture. Let it sit for 10-15 minutes.

Crumble the Tofu:

Unwrap the tofu and crumble it into small pieces using your hands or a fork. Set aside.

Sauté the Vegetables:

Heat olive oil in a large skillet over medium heat. Add chopped onion and red bell pepper. Sauté for about 3-4 minutes, until they start to soften.

Season the Tofu:

Add minced garlic to the skillet and sauté for another minute until fragrant. Then, add the crumbled tofu to the skillet.

Spice it Up:

Sprinkle turmeric, smoked paprika, salt, and pepper over the tofu. Stir well to evenly distribute the spices and achieve a vibrant yellow color.

Cook the Tofu:

Cook the tofu mixture for about 5-7 minutes, stirring occasionally, until it's heated through and has absorbed the flavors.

Optional Additions:

If you're adding spinach or kale, stir it in now and cook until wilted. You can also add mushrooms or vegan cheese at this stage if desired.

Serve:

Garnish your tofu scramble with sliced green onions and, if you like, fresh parsley or cilantro for a burst of color and flavor.
