SHREDDED BROCCOLI AND RED ONION SALAD

Ingredients:

  • 1 large head of broccoli, trimmed and shredded

  • 1/2 red onion, thinly sliced

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup raisins

  • 1/4 cup sunflower seeds

  • 1/4 cup chopped fresh parsley

  • 1/4 cup apple cider vinegar

  • 1/4 cup olive oil

  • 1 teaspoon honey

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Directions:

  1. In a large bowl, combine the broccoli, red onion, cherry tomatoes, raisins, sunflower seeds, and parsley.

  2. In a small bowl, whisk together the apple cider vinegar, olive oil, honey, salt, and pepper to make the dressing.

  3. Pour the dressing over the broccoli mixture, and toss to coat evenly.

  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to develop.

  5. Serve the salad chilled or at room temperature, garnished with additional parsley if desired. Enjoy!

Note: You can also add other ingredients to this salad, such as crumbled cheese of your liking, chopped nuts, or dried cranberries. Experiment with different flavors and textures to make the salad your own.
