CHIA SEED PUDDING

Ingredients:

  • 1 cup unsweetened almond milk

  • 1/2 cup chia seeds

  • 2 tablespoons coconut flakes

  • 1 tablespoon maple syrup

  • 1/2 teaspoon vanilla extract

  • 1 cup sliced strawberries

  • 1/2 cup blueberries

Directions:

  1. In a medium bowl, whisk together the almond milk, chia seeds, coconut flakes, maple syrup, and vanilla extract.

  2. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or overnight.

  3. Before serving, stir the pudding to combine any clumps. Divide the pudding among 4 bowls or cups, and top with the sliced strawberries and blueberries. Serve chilled, garnished with additional coconut flakes if desired. Enjoy!

Note: You can also add other ingredients to this pudding, such as chopped nuts, cocoa powder, or fruit puree. Experiment with different flavors and textures to make the pudding your own.
